The Double Barrel Single Pot Still brings Ireland's own whiskey style into the Two Stacks core range. Distilled at The Great Northern Distillery in Dundalk, Co. Louth from a mash of malted and unmalted barley, it carries the peppery, gingery prickle and oily texture that only pot still whiskey delivers, and it is released globally at 43%.
True to the Double Barrel name, maturation starts in Ex-Bourbon barrels, which cushion the spice with vanilla and barley sugar, before a finish in American rye whiskey casks sharpens things up again with clove, dill and a dry cereal edge. Spice finished spice could easily overreach, but at this strength the whiskey stays composed, green apple and cream up front, black pepper and rye snap behind.
