Description
A single pot still whiskey from The Great Northern Distillery in Dundalk, Co. Louth, distilled from Ireland's signature mash of malted and unmalted barley and bottled at 7 Years Old by the bonder Two Stacks in 2023. The run came to 300 bottles for the Netherlands, an unusual pairing of the country's oldest style with one of its most experimental cask choices.
The spirit spent its years in Ex-Bourbon barrels before a finish in Cabernet Franc red ice wine casks, sweet wine wood that layers candied red berries and jammy richness over the pot still hallmarks of black pepper, ginger and an oily, creamy texture. At 56% and undiluted, it is broad shouldered and warming, with the ice wine sweetness surfacing as it sits in the glass.
