Two Stacks works in the old Irish bonder tradition, sourcing, marrying and finishing whiskey rather than distilling it, and this 12 Years Old single grain shows the approach. Column distilled at Cooley in Co. Louth and matured in first fill bourbon barrels, it was finished in American rye whiskey casks and bottled at 46% for Belgium in 2022.
The grain base brings soft toffee, banana and coconut, the gentle sweetness typical of Cooley's column stills, and the rye casks push back with black pepper, dill and a toasty spice that sharpens the whole. The result drinks like a conversation between Irish smoothness and American bite. At 46% it holds its texture well, finishing on caramel and a last peppery flick.
