Cider Cask Finish is one of Tullamore D.E.W.'s experiments, a triple distilled blend of Ireland's three whiskey styles given a second maturation in casks that have held cider. It carries no age statement and is bottled at 40%, released in the middle of the last decade for the European market.
After ageing in ex-bourbon barrels the blend rests in cider casks, a fitting pairing given Ireland's orchards, which lift a crisp apple sweetness and a slightly yeasty, fermented note over the vanilla base. The whiskey stays light and unpeated, the cider finish adding novelty rather than weight. An easygoing blend that plays on the apple side already present in Irish whiskey.
