Tres Hombres Oliver & Oliver Ed. 73 2007 is a Dominican Republic rum from the 2007 vintage, a collaboration carried aboard the sail freighter Tres Hombres and sourced through the island blending house Oliver & Oliver. The maritime story aside, this is an eighteen year old presented unsweetened, which sets it apart from the brand's usually sweeter line.
Matured in Ex-Bourbon oak, it offers vanilla, dried fruit, honey and spice on the nose, then honey, wood, chocolate and caramel across the palate, finishing on honeycomb, wood and allspice. The unsweetened presentation lets the long ageing show a drier, more honeyed side than Oliver & Oliver's house style typically allows. The result is a characterful, well aged Dominican that leans on oak and honey rather than added sugar, a more serious sipper for those who appreciate the island's rum without the usual dosage.
