Watershed is an early single malt from Tipperary Boutique, the Ahern family's farm distillery in Co. Tipperary. Released in 2016 as a batch of 1916 bottles, it was matured in first fill ex bourbon barrels and bottled at 47% natural strength without an age statement.
First fill ex bourbon oak is the classic backbone for Irish single malt, and here it gives vanilla, honey and a soft cereal sweetness lifted by fresh orchard fruit. Bottled at natural strength without chill filtration, Watershed keeps a rounded, malt led character, a straightforward early expression from a distillery that bottles both sourced malt and its own barley spirit.
