Peter Lacy, the Limerick man who became a field marshal in imperial Russia, lends his name to this entry in Thomond Gate's Departed Spirits of Limerick series. It is single pot still whiskey from the Great Northern Distillery in Dundalk, Co. Louth, matured in an imperial stout cask from Limerick's own Treaty City Brewery and bottled in 2022, 285 bottles for the Irish market.
The stout cask pours dark chocolate, coffee roast and malt extract over the whiskey's honey and vanilla, while the pot still mash of malted and unmalted barley keeps a peppery, husky grain edge underneath. At a cask strength of 53.28% it is a fireside pot still, roasty and full textured.
