The first cask of Thomond Gate's Bold and Brave, BB-001, sits in the Limerick bonder's Departed Spirits of Limerick series, single malt distilled at the Great Northern in Dundalk, Co. Louth and finished in a red ale cask. It was bottled in 2021 at 5 Years Old, 270 bottles at full cask strength for the Irish market.
Five years in ex-bourbon oak set down vanilla, honey and green apple before the ale cask added toasted malt, caramel and a soft bitter snap on the finish. At 58.22% it arrives bold, as the name promises, but water coaxes out a creamy, cereal sweetness that anchors the whole thing.
