The Whistler Irish Honey is an Irish whiskey and honey liqueur from the Boann Distillery in Drogheda, Ireland, bottled at 33%, part of the house Trilogy collection of an Irish whiskey, an Irish honey and an Irish cream. The honey liqueur is produced in close collaboration with the Cooney family beekeepers, a partnership that points to the honey itself as a defining ingredient. It sits in the whiskey based honey liqueur tradition, where the spirit gives structure and the honey the sweetness.
The nose is salted caramel, honey and almonds. The palate is creamy with honey, vanilla, caramel and almonds, the finish long, dry and sweetish with honey. Behind the bar it brings honeyed sweetness, a creamy body and a whiskey backbone, useful for softening and sweetening a drink while keeping a spirit character. It pours long over ice, lifts a hot toddy or warm winter drink, and slots into whiskey based long drinks and cocktails where a honey note is wanted. The dry honey finish keeps it from cloying.
