Dark Symphony is a Whistler blend from Boann Distillery in Drogheda, Co. Meath, built from sourced Irish malt and grain whiskeys in the bonder style and finished in French Cognac VSOP barrels. It is bottled at a precise 43.14% for markets worldwide, one of the label's more polished, after dinner leaning releases.
The Cognac wood brings dried apricot, candied citrus and a brandied warmth to the blend's soft base of vanilla, toffee and cereal sweetness. Malt fills the middle with honey and light orchard fruit, and the finish is rounded and gentle, orange peel, vanilla pod and a faint grip of French oak. It suits a glass after dessert, or a serious highball.
