Description
The Whistler is the Cooney family label that began as bonder work with sourced Irish malt years before their Boann Distillery in Drogheda, Co. Meath fired its stills in 2019. This 15 Years Old, from the playfully named PX I Love You series, is mature sourced single malt, fourteen years in Bourbon wood then a finishing year in a Pedro Ximenez sherry hogshead, cask 1669, chosen with Celtic Whiskey Shop and bottled in 2023 for the Irish market.
The long Bourbon upbringing built a base of honey, vanilla and soft orchard fruit, and the PX year drapes fig, date and dark chocolate over it without burying the malt. Bottled at 46% in a run of 420, it finishes on raisin, espresso and gently drying oak, an old style sherried Irish malt from a young distillery's bonded stocks.
