The Irishman is a Walsh Whiskey label from Co. Carlow, and this single malt edition, bottled in 2022 for an event, draws its spirit from Bushmills in Co. Antrim. It carries no age statement, leaning instead on cask work over the triple distilled, unpeated malt the north coast site is known for, and it is bottled at an approachable 40%.
Maturation splits between bourbon and Oloroso sherry casks, giving honey and vanilla from the American oak and a raisined edge from the sherry wood. Fresh green fruit, a dry note of hay and a faint flinty tang keep it lively, an easy drinking single malt in the soft Antrim style, bottled by a bonder house that credits its casks rather than inventing a pedigree.
