Legacy is a single malt in The Irishman range from Walsh Whiskey, released in 2023 and bottled at 46% at the company's Co. Carlow base. It pairs a standard ex bourbon maturation with a finish in casks from Chateauneuf-du-Pape, the southern Rhone red, an unusual choice for Irish single malt.
Ex bourbon oak lays down vanilla, honey and malt, and the Rhone wine casks fold in red fruit and a soft, peppery spice over the top. At 46%, the wine finish stays balanced against the malt rather than overwhelming it, a fruit led single malt that borrows its extra colour and warmth from French red wine oak.
