Description
The third edition of Wonders of Wood continues Teeling's exploration of rare oak, this time with virgin Swedish oak coopered by ThorslundKagge, one of very few cooperages working the slow grown forests of the Baltic. Underneath is the Dublin distillery's triple distilled single pot still, made from malted and unmalted barley at Newmarket Square and released across Europe in 2023.
The spirit starts in ex-bourbon casks before the tight grained Swedish oak takes over, and this edition reads sweeter than its predecessors, honey, malt extract and vanilla folding into the peppery, faintly oily texture that unmalted barley brings. Bottled at 50% without dilution, it argues persuasively that where an oak tree grows matters as much as what the cask once held.
