Description
Wonders of Wood is Teeling's series exploring what unusual oak species do to its single pot still spirit, and this 2021 release opened the line. The whiskey was triple distilled at the Newmarket Square distillery in Dublin, the first new distillery in the city in 125 years, from the traditional mash of malted and unmalted barley.
Maturation moved from ex-bourbon barrels into virgin Chinkapin oak, an American white oak species almost never seen in whiskey, and the fresh wood works hard, pushing dark chocolate, leather and toasted spice over the gingery prickle of the pot still mash. Bottled without dilution at 50%, it drinks broad and toasty, a clear statement of how much the tree itself shapes what ends up in the glass.
