The second Sommelier Selection in Teeling's Small Batch Series went to Bordeaux, finishing the Dublin blend in Sauternes casks that once held the region's botrytis sweet wine. Released for Europe in 2020, it set the pattern the series has followed since: malt and grain whiskeys from the Teeling stocks, ex-bourbon matured, then handed to a wine cask chosen for character rather than fashion.
The Sauternes wood lends honey, lemon oil and a waxy, oily texture, with older oak beneath keeping the sweetness from turning simple. Bottled at 46% without chill filtration, it is a bright, honeyed pour in the house style, the wine cask influence present as perfume and texture rather than heavy fruit.
