Description
Sotol Coyote con Vibora is a limited release sotol from Chihuahua, distilled from the desert spoon, Dasylirion leiophyllum, a high desert plant and not an agave. Vibora means little venomous snake, and the bottling takes its name from the rattlesnakes used in distillation, a desert riff on the pechuga method, with the bottle neck dressed in snakeskin styling to match the theme.
The sotol pinas are roasted in a conical oven over mesquite wood, then milled by hand with axes before fermentation in oak vats with well water. After a first distillation, the second run is carried out pechuga style with rattlesnakes suspended in open vessels inside the still, lending a spiced, earthy character. The distillate then rests a few days with cooked sotol pinas and is matured three months in cask. Expect smoky, earthy notes over lime, herbs and wet stone, with a soft, long finish at 45 percent.
