Silver Seal, the Modena bottler prized by collectors for its single casks, selected this Diamond Demerara from a 2003 vintage, aged twenty three years in ex-bourbon and bottled undiluted at 58.3%. Silver Seal works in the unsweetened independent tradition and has a long association with Demerara and Caroni rum.
With no specific still marque recorded, the dependable reading is deeply aged Guyanese molasses rum, with more than two decades in ex-bourbon expected to bring rich vanilla, caramel, dark fruit and substantial oak in the house style. At cask strength the rum carries real weight and rewards a little water. A long-aged, full-proof, naturally presented Demerara from a respected Italian collector's bottler.
