Dimension VII is the seventh edition in the Limited Release series and continues the house approach of virgin French oak at 46% ABV. With an outturn of 12,885 bottles, it’s a substantially wider release than the earlier chapters of the range, moving it closer to a broad market batch rather than a tight allocation bottling.
It’s made in Central Otago, where low humidity and significant seasonal temperature swings increase spirit movement through the wood, accelerating extraction and helping the whisky build structure early. Virgin French oak is central to that structure. Fresh oak carries a high load of extractable compounds, meaning flavour and mouthfeel develop quickly and with clear definition. Compared with American oak, French oak typically brings more tannin driven grip and a drier spice profile, shaping the finish rather than softening it.
Ellagitannins account for much of the drying structure and firm edge, while toasted lignin breakdown products contribute vanilla and sweet spice aromatics that sit around the fruit core. In the glass, that translates to sweet oak tones upfront, tightening through the mid palate, and finishing long with clear tannin grip and controlled spice.
