A Paraguayan column rum from Maison Ferrand finished in a Kyro rye whisky cask, the grain influence layering cereal, malt and a whiskyish edge over a soft base of caramel, coffee and ripe banana, single cask at 44.4%.
Description
Bottled by Maison Ferrand under the Planteray name, this is a 2019 Paraguayan rum aged five years and then given a finishing period in a cask that previously held Kyro rye whisky from Finland. The single cask treatment and the unusual finish are the point here, a molasses rum nudged toward the grain world rather than the tropical one, drawn off at 44.4% rather than full strength.
The house style runs the spirit through cognac casks before this finish, and the rye barrel pushes the profile firmly toward whisky territory, cereal and malt on the nose alongside a clear banana note, then caramel, coffee and more malt on the palate. The finish stays mild, with honey and a light fruitiness. Maison Ferrand openly doses its rums, so this is unlikely to be bone dry, and the base spirit reads as fairly straightforward, with the cask doing most of the talking rather than the distillate underneath.
