Description
Pescador de Suenos Tepeztate is a joven mezcal from the Santa Sabia distillery in Oaxaca, made in very small batches from Agave marmorata, the wild Tepeztate that can take twenty years and more to mature. That slow growth and scarcity make it one of the most distinctive and individual agaves to work with, intense and herbaceous by nature.
The agave is milled in a traditional mill and roasted in a conical stone oven, which is the source of the light wood smoke. Fermentation runs in juniper wood vats and distillation is in copper stills, after which the spirit is rested in glass rather than wood, a method that lets it settle and integrate while keeping its agave character. The nose is fresh and intensely green and earthy, with herbs, roots and a hint of smoky wood. The palate balances sweet agave caramel against ripe dark fruit such as plum, with subtle mineral accents and cocoa. Bottled at 50%.
