A Dominican Quorhum solera from Oliver & Oliver, sweet and roasted with chocolate, coffee and nuts over a woody, oily finish, a smooth dessert pour at 40% where the 16 marks a component, not an age.
Description
Oliver & Oliver Ron Quorhum 16 Sistema Solera TERRA NOVA is a Dominican Republic rum from the well known island blending house, made as a solera blend in the same family as the rest of the Quorhum range. The 16 denotes the oldest component in the solera, not an age statement, so the blend is largely younger rum lifted by a fraction of older spirit.
Distilled from molasses and built through fractional solera ageing, it leans roasted and sweet: chocolate, coffee and nuts on the nose, then woody chocolate and coffee on the palate, finishing sweet and woody with dried fruit and an oily texture. Coffee tends to lead among the roast notes. It drinks clearly sweet, consistent with Oliver & Oliver's house style and the dosage common to it, so this is best taken as a smooth, roast driven, dessert leaning Dominican rather than a structured, long aged rum.
