Oliver and Oliver Opthimus Ron Artesanal (Pedro Ximenez Cask) is a Dominican rum from Oliver and Oliver, the well-known Dominican blending house behind brands such as Cubaney and Opthimus. This expression is finished in Pedro Ximenez sherry casks, the sweetest of the sherry styles.
Built on a molasses base and bottled at a soft 38%, it should lean rich and dessert-like, with the PX casks bringing raisin, dried fig and dark sweetness over the Dominican vanilla and caramelised-nut profile. Oliver and Oliver bottlings tend toward the rounded, sweeter end of the Spanish-style spectrum, so this is best read as a smooth after-dinner pour rather than a dry one.
