Description
Nueve Tequila Cristalino, formerly Nueve B, is a 100% Blue Weber tequila from the Los Altos highlands of Jalisco. It is an aged tequila taken back to clear: the spirit is matured two years in bourbon oak casks, then charcoal filtered to strip the colour so it carries the depth of an Añejo with the look of a Blanco. The highland agave is left to ripen eight to twelve years and cut close to the piña with a coa.
The hearts are slow baked fifty four hours in brick ovens, fermented with natural yeast in stainless steel over about two and a half days, and twice distilled before two years in bourbon oak. After filtration removes the colour, a little agave syrup is added to round the texture, working with the wood notes to soften the whole. The result is honey, vanilla and toasted oak in a clear glass, mild and lightly sweet at 38%.
