Description
Mionetto makes this Prosecco Superiore DOCG from the famous hills of Valdobbiadene, the top tier of the Prosecco zone, using the native Glera grape. It is made by the Charmat method, the second fermentation carried out in pressurised stainless steel under controlled temperature rather than in bottle. Keeping the wine in tank and off oak preserves Glera's fresh orchard fruit and floral character, and the extra dry dosage leaves a gentle fruity roundness balanced by the wine's natural acidity. The result is a fine, persistent bead and a creamy, elegant structure.
The colour is pale straw with a fine, persistent perlage. The nose leads with green apple, pear and white flowers with a touch of citrus peel, and white peach and honeysuckle behind. The palate is fresh and harmonious, the soft mousse and gentle extra dry sweetness carried by clean acidity to a lively finish. Serve well chilled at 6 to 8 degrees in a white wine glass or flute. It makes a stylish aperitif and suits antipasti, white fish, light salads and shellfish.
