This Extra Dry sits in Mionetto's Luxury Collection and comes from the Treviso DOC around the house base in the Veneto. It is made from Glera, the grape that defines Prosecco, grown where a mild climate, Alpine freshness and mineral soils give clean, fruity wines. Fermentation is by the tank method, which preserves the primary fruit and the fine bead, and the cuvee rests on a careful selection of base wines for an elegant, precise style. The extra dry finish leaves a gentle fruit sweetness alongside a lively acidity.
The colour is pale straw yellow with a fine, persistent bead. The nose shows green apple, pear, white flowers and delicate citrus, and the palate is fresh and balanced with harmonious fruit sweetness and bright acidity, closing long with floral and fruity accents. Serve it well chilled at 6 to 8 degrees in a white wine glass. It makes an elegant aperitif and suits antipasti, carpaccio, seafood, light pasta and risotto, fresh salads and mild cheeses, working equally at a reception or a quiet dinner.
