Description
Mionetto has been making Prosecco near Valdobbiadene since 1887, and this Treviso Brut is made from selected Glera from the province of Treviso within the wider DOC. The second fermentation runs in a pressure tank by the Charmat method, which preserves Glera's delicate fruit and floral aromatics that a longer bottle ageing would trade away, and the wine spends at least six months developing before release to round out its structure. At 10 to 12 grams of residual sugar it finishes as a genuine dry Brut rather than the softer extra dry that is common for the grape.
The colour is a pale straw yellow with a fine, intense bead. Golden Delicious apple, pear, green apple and citrus lead the nose, with a light honeysuckle top note, and the palate is fresh, dry and balanced with a clean, fruit driven finish. Serve well chilled at 6 to 8 degrees as an aperitif. It pairs with antipasti, shellfish and mussels, and works through light pasta, risotto and grilled white fish, the small format making it easy to open for one.
