Full maturation in a first fill Oloroso butt gives a deeply sherried profile, dried fig and raisin, walnut and dark chocolate over the pot still spirit's peppery, oily spice. Bottled undiluted at a robust 59.7%, triple distilled and unpeated, a rich sherry expression of classic Midleton pot still.
