Mezcal Salvadores Destilado con Cafe & Cacao

Mezcal Salvadores Destilado con Cafe & Cacao is a flavoured agave spirit from the Salvadores family at Casa Palacios in Tlacolula de Matamoros, Oaxaca, a brand whose mezcal roots run to the early twentieth century and whose distillery was built in 2019. It takes a mezcal base and adds natural flavours from organic coffee and cocoa seeds, piloncillo, the unrefined brown sugar of Mexico, and cinnamon, placing it in the sweetened liqueur style rather than a straight joven.

Underneath the additions sits roasted agave from the pit, here built from the Cirial agave, a tall form of the karwinskii family that reads green and mineral. The infusion brings the headline character: roasted coffee, dark cacao and a warm cinnamon lift over cooked agave sweetness, with the piloncillo rounding the body. Bottled at 48%, it is sweet and aromatic, framed by the agave rather than masking it.
