Description
Part of Method and Madness, the experimental line from Midleton in East Cork, this single pot still whiskey is distilled from a mash of malted and unmalted barley, the combination that gives Irish pot still its gingery, peppery spice and oily texture. It carries no age statement and was bottled in 2019 for the Irish market at 46%.
After ex-bourbon maturation the spirit was finished in acacia wood, a pale, aromatic timber rarely used for whiskey that adds honeyed sweetness, a floral lift and soft vanilla. The result keeps the creamy pot still backbone of Midleton, triple distilled and unpeated, with baking spice and barley sugar under the acacia's perfume.
