Description
This 7 Years Old single malt comes from Method and Madness, the experimental line at Midleton in East Cork where Irish Distillers hands younger stock to its apprentice distillers. Made entirely from malted barley and triple distilled in the house manner, it is a limited release bottled in 2023 for the Irish market.
Maturation combines ex-bourbon barrels with Oloroso sherry casks, the bourbon oak lending honey and vanilla while the sherry adds cooked fruit and a nutty depth. Bottled at 46% without the softness of the entry blends, it shows citrus, fresh orchard fruit and a fragrant, honeyed core over a fuller malt texture.
