Description
Le Contesse works out of the Treviso heart of the Prosecco DOC, and this Extra Dry is made entirely from Glera, the grape that defines the region. The wine is fermented in stainless steel by the tank method, which keeps the fruit fresh and the bead fine, with the second fermentation held under pressure and the base grown on medium textured soils. The extra dry dosage of around 16 grams gives a rounder, gently sweeter impression than a Brut without losing its freshness, and total acidity near 5.8 grams keeps it fresh.
The colour is a light gold with a fine, persistent perlage. Ripe apple, white peach and a touch of citrus lead the nose over floral notes, and the palate is tangy and fresh with a soft, off-dry edge balanced by a delicate minerality that carries the fruit to a clean finish. Serve at 6 to 8 degrees as an aperitif. It suits light starters such as bruschetta and carpaccio, poached salmon and mussels, seafood pasta and fruit based desserts.
