Description
Laurent-Perrier built its reputation partly on this rose, made by macerating whole Pinot Noir grapes on their skins to take colour and flavour straight from the fruit. After the short maceration the wine goes through its second fermentation in bottle by the traditional method and ages for several years on the lees. A low brut dosage keeps it dry, so the red fruit carries the wine rather than sweetness, and the long lees ageing adds a fine, persistent mousse.
The wine is a clear, bright pink with a very fine perlage. The nose leads with strawberry and raspberry, backed by red currant, a touch of cherry and ripe white peach. The palate is dry and expressive, with lively acidity, concentrated berry fruit and a gentle biscuit note. The finish is long and clean. Serve at 8 to 10 degrees in a white wine glass. It makes a memorable aperitif and pairs happily with poultry, delicate fish dishes and fresh fruit puddings.
