La Favorite Coeur de Canne Eleve sous Bois comes from one of the last independent family distilleries within Fort-de-France in Martinique. Distilled from fresh-pressed sugar cane juice on a creole column under the AOC, it is rested for a year in ex-bourbon, putting it in the elevee sous bois tier.
Bottled at 42% with no added sugar, this is a barely aged agricole that keeps its fresh, grassy heart while picking up a light golden tint and a touch of wood. Expect cane sap, herbaceous green notes and white pepper over a gentle oak frame, dry rather than sweet. A versatile rum for a Ti Punch or an easy stir.
