Description
Doocot is the house single malt of Kingsbarns, the Lowland distillery in the East Neuk of Fife founded by the Wemyss family in 2014. It takes its name from the doocot, the old dovecot tower that stands at the heart of the restored farm steading and serves as the distillery's emblem.
Kingsbarns was the dream of golf caddie Douglas Clement, who saw the need for a distillery near St Andrews. Its long-necked stills make a deliberately light, fruity, unpeated Lowland spirit. Matured in ex-Bourbon and shaved, toasted and re-charred red wine casks, the two woods give vanilla and a soft berry lift.
Bottled at 46%. The ex-Bourbon gives vanilla and citrus, while the STR red wine cask adds a light berry sweetness. The recorded notes run to citrus, a cooked mash note, fresh fruit, honey, a faint solvent lift and chocolate. The everyday face of the Fife distillery.
