Description
Kikusui Shuzo, a Japanese maker with deep roots in shochu, produces the Ryoma rum, and this new recipe release is young, just over a year in ex bourbon, bottled at 40%. Despite its age it shows real character, the nose immediately expressive with fermentation driven notes of mushroom, undergrowth and ripe fruit alongside nutty chocolate and oak, hinting at toasted cereal and a soy edge.
The palate brings caramel, vanilla, fruit and molasses with a peppery lift, finishing on herbal, vegetal and faintly iodine notes plus a lingering sweetness. This is a punchy, distinctive rum that does not aim for beginner friendliness, its savoury, fermented Japanese character setting it apart from sweeter Caribbean styles. A characterful, fairly priced pour for adventurous drinkers curious about Japanese rum and willing to engage with its unusual, umami leaning profile neat.
