Description
Jack Tar bottled this Dream Catcher as a single cask of Uitvlugt at thirty years, and the data points to Port Mourant character behind it, the oily, anise-driven double wooden pot still that defines old navy Demerara. Long ageing and a Port cask finish have softened that intensity into something rounder, bottled at a full 56%.
The nose is composed and mellow, vanilla, dried fruit and woodiness wrapped in warmth, while the palate stays balanced and elegant, vanilla and raisin over a herbal, layered wood frame. The finish turns floral and warm with more dried fruit. Despite the Port cask this reads dry and refined rather than sweet, the fortified wine adding depth without dosage. It rewards small, slow pours and a little rest in the glass, an ideal way to meet the Port Mourant profile in a calmer, long-aged form for drinkers who already love the classic style.
