House of Mc Callum Mc Explorer The Art of Rum Oloroso Sherry Cask is a molasses rum from Mauritius, drawn from multiple distilleries and bottled by the Scottish-styled House of Mc Callum. It is an eleven year old release built around a full oloroso sherry maturation.
Mauritius sits outside any agricole AOC, so this is a molasses island rum aged in oloroso sherry casks and bottled unsweetened at cask strength, 49.5%. Oloroso-matured rum of this age typically gains dried fruit, walnut, dark caramel and warm spice over the cane base, the sherry pushing it rich yet dry. Bottled at full proof and without added sugar, it rewards a little water and leans toward a deep, after-dinner character.
