Description
An early Hinch release from The Time Collection, bottled in 2019 while the Co. Down distillery's own make was still sleeping. The whiskey inside is peated single malt distilled at Cooley in Co. Louth, the distillery that revived smoky Irish whiskey, matured and branded by Hinch in an honest continuation of the bonder tradition.
Ex-bourbon maturation keeps the frame simple while the whiskey itself runs dark for an Irish malt: peat smoke wound through leather, tobacco, old wood and an oily, yeasty depth. At 43% it is an accessible route into Ireland's rare peated side, closer to a soft heather fire than to Islay's medicine cabinet.
