Hinch Distillery opened in 2020 on the Killaney estate outside Ballynahinch, Co. Down, and like most young Irish houses it launched with well chosen sourced whiskey while its own spirit matures. This 5 Years Old from the Double Wood line is a blend of Irish malt and grain, matured in ex-bourbon casks and finished in Madeira wine casks for the European market.
The Madeira stage is what sets it apart at this age, adding baked apple, caramelised orange and a nutty warmth to the vanilla and cereal sweetness of the bourbon wood. Bottled at 46%, noticeably above the standard strength for a young blend, it carries more texture and spice than its age suggests, finishing on toffee and a gentle wine tang.
