Description
Hinch Distillery at Ballynahinch, Co. Down, was founded in 2020, so the whiskey in this 10 Years Old blend was laid down elsewhere in Ireland long before the stills fired. That is the bonder tradition at work, and Hinch's contribution is the selection and the finish, moving mature blended whiskey from ex-bourbon casks into Oloroso sherry wood before bottling in 2022 for the Dutch market.
Ten years of American oak give the whiskey a settled sweetness, toffee, vanilla and soft orchard fruit, and the Oloroso finish folds in raisin, walnut and a dark marmalade note. At 43% it stays smooth and rounded rather than loud, an old fashioned sherried Irish profile in a young company's livery, with a dry, nutty finish that lingers well.
