Description
Henkell & Co. is one of Europe's oldest sparkling wine houses, and this Blanc de Blancs Dry-Sec shows the German take on approachable fizz. The name signals a wine built entirely from white grapes, here led by Chardonnay for lightness and clarity. Rather than bottle fermentation, Henkell uses the Charmat or tank method, running the second fermentation in stainless steel so the fresh primary fruit stays intact. The dosage sits in the dry range but keeps a little fruit-friendly roundness, which is why it works across so many occasions.
The wine is a light straw yellow with a fine, persistent bead. The nose leads with green apple and citrus fruit over a hint of white flowers, while the palate adds pear and white peach before a clean, gently tart close. Serve it well chilled at around 6 to 8 degrees in a tulip glass. It makes an easy aperitif and suits light starters, fresh salads, sushi and mild cheese.
