Description
Henkell Blanc de Blancs is made from an all white cuvée led by Chardonnay, which is what the name signals. The base wine is fermented cool in stainless steel to hold its freshness, then given a second fermentation by the Charmat method to build a fine, persistent mousse rather than the toastier character of a bottle fermented wine. Reserve wines from earlier vintages are blended in to keep the house style consistent from year to year, and the wine is finished just off dry.
The colour is a light straw yellow with a fine, lively bead. Green apple, ripe pear, citrus and white flowers lead the nose, with a faint hint of stone fruit, and the palate is fruity and slightly creamy with a balanced acidity and a gently off-dry, dry-sec finish. Serve well chilled at 6 to 8 degrees as an aperitif. It suits fish starters, light salads, finger food and fruit based desserts, and the small piccolo bottle makes it a tidy single portion or a gift.
