Grays makes this New Grove Savoir Faire on Mauritius from molasses, not cane juice, a 2008 single cask matured fifteen years and bottled at cask strength, 49.8% and unsweetened. New Grove is a Mauritian name that has been steadily winning over rum drinkers, and this expression shows why.
Matured in French Limousin oak, the kind of tight-grained wood that lends gentle spice, it balances dryness with generous flavour. The nose carries wood, cinnamon, caramel and dried fruit, the palate brings a striking menthol coolness alongside woody caramel and spice, and the finish stays minty, woody and balanced over a long, dry close. There are echoes of fruity cherry-led molasses rum, but the menthol freshness and integrated strength set it apart.
