A 19 year old Glenfarclas from North Star Spirits, 2006, at 59%. Orange, raisin and a treacle edge, with dried fruit, fig and walnut from the cask. It holds tens of thousands of casks on site, with stock from every year since 1953. Matured almost wholly in Oloroso sherry casks from Jerez. This is a richly sherried Speyside single malt.

Description
A Glenfarclas of a 19 year old chosen by North Star Spirits, distilled in 2006, at 59%, one of 299 bottles. Glenfarclas is a richly sherried Speyside single malt, run by the Grant family since 1865. It draws on that deep inventory for the Family Casks, single vintages reaching back to the 1950s. Its whiskies are bottled at their natural colour, without chill filtration. Direct firing chars the wash a little, lending the rich, nutty depth Glenfarclas is known for.
The spirit was taken gently through wash and spirit stills, the direct fired stills lending a nutty depth. It was matured in an Oloroso sherry cask, the wood working deep into the malt. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. The full spirit deepens with time, the cask drawing out its darker register.
Bottled at a cask strength 59%, it is deep and concentrated. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. Fig, honey and a dark chocolate fill the middle. The close is rich and dark, fruit over a warm spice. This is Glenfarclas's deep, fruity Speyside style.
