Eight years in a single Oloroso cask at sustained 61% delivers concentrated cask interaction at the young end of sherry maturation. The cask sat in lower humidity warehousing favouring water over alcohol evaporation, keeping the spirit at high strength. European oak's tannin contribution presses through aggressively at this abv, while the residual oxidised sherry combines with lignin's vanillin and syringaldehyde extractions. Hemicellulose breakdown produces fresh furfural and the early stages of caramelised sugar chemistry, with the cask's first fill activity at full pace.
On the nose, raisin and fig sit with fresh polished oak, the cask's first fill sherry signature clearly forward. The palate runs concentrated at 61%: dark chocolate, dried prune and a tannic European oak grip, with cocoa nib bitterness emerging mid palate as oak tannins assert themselves.
