    An official Glenfarclas, a 32 year old, 1974, at 60.8%. Deep and dark, all baked apple, honey and a chocolate, with dried fruit, fig and walnut from the cask. Its Family Casks draw single vintages from a deep, old inventory. The house behind the 105, one of the first cask strength malts, from 1968. This is a Speyside single malt of real standing.

    A distillery release of Glenfarclas, a 32 year old, from 1974, cask 5786, at 60.8%, 555 bottles in all. Glenfarclas, the glen of green grass, is a richly sherried Speyside single malt. Its spirit is matured almost wholly in sherry butts brought up from Jerez. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds.

    Distilled in copper pot stills, the direct fired stills lending a nutty depth. An Oloroso sherry cask held it, drawing the rich spirit on over the years. At a great, fragile age oxidation rules, sotolon lending maple and dried fig as beeswax and old leather linger. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The wood frames the spirit without ever stripping the full Speyside body.

    At 60.8%, undiluted, it is dark and full. Orange, raisin and a treacle edge, with dried fruit, fig and walnut from the cask. A dark chocolate and a soft oak give it weight. Dried fruit, spice and a soft oak see it out. This is the family sherry malt of Ballindalloch.
