    This Glenfarclas was bottled by Scott’s Selection, a 40 year old, at 48.5%. Deep and dark, all baked apple, honey and a chocolate. Its water rises from the granite of Ben Rinnes, above Ballindalloch. Matured almost wholly in Oloroso sherry casks from Jerez. It holds tens of thousands of casks on site, with stock from every year since 1953. This is the family sherry malt of Ballindalloch.

    A 40 year old Glenfarclas from Scott's Selection, distilled in 1965, at 48.5%. Glenfarclas, the glen of green grass, is a richly sherried Speyside single malt. Its whiskies are bottled at their natural colour, without chill filtration.

    It was taken gently through wash and spirit stills, building a deep malt of dried fruit and dark sugar. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the fruit. In its ethereal years the malt turns waxy and oxidative, faded esters and a whisper of sotolon over dark fruit. Active wood drives the maturation, the cask deep in the malt. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. The wood frames the spirit without ever stripping the full Speyside body. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years.

    At a natural 48.5% it is full and rich. Fig, walnut and a bittersweet chocolate, lifted by a sweet oak. It is full and fruity, the spirit carrying the cask. The finish is rounded, dark and spiced. This is the family sherry malt of Ballindalloch.
