Description
A Glenfarclas of an 11 year old chosen by North Star Spirits, distilled in 2011, at 56.5%, one of 402 bottles. Glenfarclas is a Speyside single malt from Ballindalloch, in the heart of Speyside. Its water rises from the granite of Ben Rinnes, above the distillery at Ballindalloch. It launched the 105 in 1968, one of the first cask strength single malts sold to the public. Its slow, cool dunnage maturation loses very little to the angels each year.
The spirit was distilled to a rich, generous cut, shaping a rich Speyside body with real weight. Maturation came in an Oloroso sherry cask, layered over the full Glenfarclas make. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Active wood drives the maturation, the cask deep in the malt. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years.
Bottled at a cask strength 56.5%, it is deep and concentrated. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. A baked apple and a warm cinnamon lift the middle. It finishes long, full and fruity. This is a dark, fruity Speyside single malt.
