Signatory Vintage bottled this Glendullan, a 15 year old, distilled in 2009, from cask 11, at 55.5%, one of 338 bottles. Glendullan is a Speyside single malt from Dufftown, on the banks of the River Fiddich. It was built in 1897 by William Williams and Sons, Aberdeen blenders, the seventh and last distillery raised in Dufftown. It sits on the banks of the River Fiddich, in the heart of Speyside.
The spirit was distilled from unpeated malt, for a clean, grassy make with a fruity lift. Maturation came in an Oloroso cask, layered over the green Glendullan make. At oxidative maturity aldehydes lend a nutty edge while ellagitannins draw a gentle, drying grip across the fruit. Active wood frames the fruit without ever crowding the light Speyside spirit. Years in oak deepen the spirit to gold, the body growing rounder with time. The fresh, fruity spirit deepens with time, the cask drawing out a soft honey.
At its natural 55.5% it is full and fruity. Pear, apple and a soft spice, with dried fruit, fig and walnut from the cask. Beneath it run green apple, pear and a soft grass. The finish is light, fruity and clean. This is a green, malty Speyside single malt.
